Summer and Summer food 2015

The summer holidays are drawing ever nearer which is why I have made this blog post all about Summer and Summer food!

 Banana Ice Cream

 In only 10 steps with only one ingredient:

1 large ripe banana


Equipment:

Knife

Cutting board

Airtight, freezer-safe container

Small food processor

Spatula


Instructions:

1. Start with ripe bananas

2. Peel the bananas and cut them into slices/small pieces.

3. Put the bananas in an airtight container, (you can use a freezer bag).

4. Freeze the banana pieces for at least 2 hours, but ideally overnight.

5. Blend the banana in a small food processor or powerful blender.Pulse the frozen banana pieces. 

6. Keep blending until the banana looks crumbly. Scrape down the food processor.

7. Keep blending until the banana looks gooey.Scrape down the food processor.

8. Keep blending until the banana looks like oatmeal . Scrape down the food processor.

9. You'll see the mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds, and if  your adding any mix-ins, like peanut butter or chocolate chips, this is the moment to do it.

10. Put it into a airtight container and freeze until solid.


Barbecued chicken drumsticks

In only 2 steps with only 6 ingredients.

Sticky chicken drumsticks

Ingredients:
8 chicken drumsticks
2 tbsp soy sauce
1 tbsp honey
1 tbsp olive oil
1 tsp tomato purée
1 tbsp Dijon mustard

Instructions:

 1. Make 3 slashes on each of the drumsticks. Mix together the soy, honey, oil, tomato purée and mustard. Pour this mixture over the chicken and coat thoroughly. Leave to marinate for 30 mins at room temperature or overnight in the fridge. Heat oven to 200C/fan 180C/gas 6.



2. Tip the chicken into a shallow roasting tray and cook for 35 mins, turning occasionally, until the chicken is tender.
