"E" is for her eyes, with love-light shining,

"R" means right, and right she'll always be,

Put them all together, they spell

"MOTHER,"

A word that means the world to me.

Malted hot chocolate and raspberry mug cake recipe

In a large, microwave-proof mug, combine the flour, sugar, cocoa powder and malted milk powder and mix well. Add in the egg until the mixture is smooth and thick. Gradually stir in the milk and oil, then add in 6-8 raspberries and the chocolate chips. Mix well and microwave on high for 4-5 minutes until firm.

Tip: For an extra indulgence, whisk double cream until firm, then gently mash through the remaining raspberries with a fork and serve on top of the hot cake.
